Coconut Flour is produced from coconut residue, called “sapal”. This is the state of the coconut meat after the coconut milk has been extracted from it. A special technology converts and utilizes the wet coconut residue into coconut flour.
Coconut Secret’s Coconut Flour is made in small batches. It is dried using a proprietary tumbler-dry method that does not expose the coconut to high heat.

This Coconut Secret Flour is highly absorbent in nature. If you use 100% Coconut Flour, it is necessary to add eggs at a ratio of 4 eggs to 1 cup flour, or increase the liquid content of the recipe by adding an extra 1:1 ratio of liquid per equal amount of flour.
Another option: Instead of adding eggs or liquid, blend with other gluten-free flours at a ratio of ¼ cup coconut flour to ¾ cup alternate flours.
