The sap is collected from coconut blossom (young coconuts) before its maturity.
Tropical cultures revere the sap as the “lifeblood” of the coconut tree. All the minerals that aid the coconut tree’s growth and development primarily come from the seawaters along the coastal shores where majority of coconut trees naturally grow.
The 65 abundant minerals in the seawaters are absorbed by the roots of the tree, and then delivered by way of the sap, to all parts of the tree.
This sap is exceedingly rich in vitamins, minerals, and amino acids, all of which translates into the impressive nutritional profile of sap vinegar.
The distinct fermentation process of sap vinegar contributes to its taste and nutrient quality compared to water-based vinegar. Sap vinegar is naturally aged for 8 months to one year, without any single alteration, thereby retaining and even enhancing its nutrient-rich properties.
Coconut water-based vinegar undergoes an “assisted” fermentation process of only 2-4 weeks, by adding as a fermentation starter, either apple cider vinegar, or muscovado cane sugar to catalyze fermentation.

Sap vinegar naturally produces a “mother” full of ALIVE probiotics, enzymes and other health-promoting co-factors.
The water from mature coconuts is considered a disposable by-product in the production of other coconut ingredients such as coconut oil, coconut flour, shredded coconut, etc. Typically, this water is tossed out, making it much less costly to produce coconut water-based vinegar.

MVP COOKING TIP
This Coconut Secret Vinegar has a very strong taste. Based on my cooking experience, I reduce the amount of vinegar I put in all my recipes.
I am not fond of a strong vinegar-y taste so I actually only add ¼ of the proportion required and taste the dish before adding some more.
Better to put a little gradually as you taste-test if you need to add more as the vinegar taste may overpower your dish.
